Quick and Easy Egg Muffins

These healthy little snacks are perfect for the super mom who wants a healthy, quick meal for her family or herself. These are great to make in advance and refrigerate for a quick breakfast for anyone who needs something quick, on-the-go. My kids and husband loves these things even for dinner too! This is one of those fun-to-make breakfasts with the kids or guests during the holidays – make the ingredients ahead of time and each person can build-their-own! Earn bonus mom points for putting out cheese, sausage, and bacon.

Egg Muffins

21 Day Fix: 2 muffins equals 1 red container


11 Eggs
1 tbsp. Dijon mustard
1 Cup Sauteed spinach, chopped
1 Cup Roasted sweet potatoes, chopped in small cubes
1 tbsp. Uncle Timmy’s Spice mix (or your favorite spice mixture is fine to use and change it up)


Preheat oven to 375.
Whisk eggs with mustard. Using a muffin pan, spray cooking spray into round, add in potatoes (fill the bottom), a couple of pinches of peppers and spinach, top with egg mixture. Repeat with each muffin round until mixture is gone. You may have ingredients left over depending on how much you put in each muffin round. This should fill all 12 rounds. Bake in oven for 18-20 minutes at 375.

You can add in whatever mix of ingredients you like, just use small portions so the egg cup doesn’t overflow in the muffin round and be sure to cook each ingredient first accordingly. These quick and easy egg muffins are great on the 21 Day Fix health plan – 2 egg muffins count as one of your allocations of the red container (protein).
