Giving Thanks – Crazy Addicting Peanut Butter Balls for Thanksgiving

Thanksgiving is about enjoying family and friends.

Appreciate the priceless things in life – health, security, work we love, loyal friends, and of course eating great food.


Today I take time to realize how lucky I am to have what I have: my home, my family, people who love me, a great job that I love, and freedom.

Let us raise a glass to those who have made our lives possible, those who do kind things for you, and those who you cherish. Maybe even share some gratitude for those less fortunate and share some food or warmth.

Today I remember my Grandmother, the kindest, fiercest woman
who gave me the qualities which made me the strong woman I am today.

I am grateful for the little things in life like her food stained recipe box with hand-written recipes like our family favorite: Peanut Butter Balls.

I have been able to share this delicious treat with my own family. It’s still a huge hit with everyone, especially my boys. My dearest friends (some of 20+ years) have such fond memories of this treat. It’s things like this that bring back the nostalgia of  Thanksgivings past, or days of grade school and middle school – it’s a warming feeling; every amount of calories is certainly worth that! This is the perfect Thanksgiving treat!

Try it for yourself!

2 cups chunky peanut butter
1/4 pound salted butter, softened
2 cups rice krispies
1 pound powdered sugar
2 bags Nestles dark chocolate chips


Mix peanut butter, butter and powdered sugar with hands until combined, add in rice krispies, mix. Then roll into small (about 2 bite sized) round balls, place into large mixing bowl and refrigerate when done for about 2 hours. Line sheet trays with parchment paper. Using a double boiler or bowl and pot, melt one bag of chocolate then proceed to coat peanut butter balls, be sure to cover the entire ball, set on parchment paper, continue. Refrigerate uncovered to let cool and harden, about 1.5-2 hours.
Depending on how large you make the peanut butter balls, this recipe can make anywhere from 40-55 pieces. These can be frozen or simply refrigerated. Cover or put in zip-lock bag when cool to store.
